Japanese knives have usually have a cutting steel harder than Western knives. For People who are new to Japanese knives they can get caught out and damage there knives. Trying to cut or chop hard products like bones or frozen foods does not go well with the harder steels. This type of work is better left for a Western knife that is made of softer steel. It will absorb the impact or bend rather than chip. Harder Japanese steels can’t absorb the energy and will chip. Cutting dried fruits is risky too, there is always a chance a kernel slipped past the deseeding process.

When this damage occurs, the best practice is to grind the blade down evenly until the chip damage has been removed. keeping the blade shape as close to original to maintain best cutting performance is essential. As the new edge moves up on the blade there might be a need to thin down the flanks of the blade. Thinning the blade is done by a progression of sharpening stones. Ensuring a polished result that looks pleasing. The final step is to sharpen the blade at the edge.

This repair requires experience and is time consuming. Usually it is in the range of $50 – $100 to repair. Depending how deep the chip is, length of the blade and hardness. When a knife is repaired well, it is hard to tell the difference.
