Shibata knives are a creation of Takayuki Shibata. The design of the knives comes out of his passion for working with knives and the way he likes to use them in his cooking passion.
We did seek out a design that would answer the consumer demands for an knife that cuts with high precision and in an effortless way.
The art over beauty mantra means that the beauty will follow out of the functional needs. Shibata took inspiration out of the animal world where the cheetah has his needs, which dictate his form, which results in his beauty.
The knives themselves are made from R2 Powder metallurgy steel. The are thin, excel at fine cutting of vegetables with minimal cell damage. which improves presentation and flavour delivery. I think of them as a culinary scalpel. Sober looks with a satin finish for the blade and polished surface on the choil and spine. All details are there and the fit and finish is impeccable.
